Adventures in Noodling;>!
May. 11th, 2011 07:56 amOne of my many projects this yr is to learn to make my own noodles. In typical “Me” fashion, I started with the hardest….Soba.
It started out well. I used a recipe that came closest to the “ni-hachi(2-8)” proportions of Wheat to Buckwheat flour. Mixing went fine, kneading…work. I was having flashbacks to college when I took a pottery class in Winter;>. Did this for 20 min then let it Rest for 4 hrs.
Started the Water and kneaded for another 5 minutes. Rolling out to ¼” went fine. Then….
Since I didn’t have a Soba knife I decided to use my trusty Italian Pasta maker(which was my Mom’s she got in the 60’s). The gluten hadn’t developed enough and the dough began splitting and crumbling on the widest setting. Since I had my homemade dipping sauce and the water boiling, I took out a bundle of store-bought and had Dinner…
My next will be the easiest…Udon. When I get back to Soba(after getting up-to-speed on Udon and Ramen) I’ll start with a 1:1 ratio and work myself up. I think I’ll also try using Bread flour for recipes higher than 50% Buckwheat…
