Jiro Ono has been a Sushi Master for over 75 yrs. He is considered by many THE Sushi Master on the planet. His tiny 10 seat restaurant has a 2 month waiting period and meals start at above $300.00(there's a funny scene when a twenty-something walks in off the street and asks for a copy menu then finds out how much and when he can eat;>).
This man is the quintisential Perfectionist whose been honing his art(and it is, even to making. Watchng him simply make a piece is like watching a Tai Chi Master in movement...). His drive to make every dish better, tastier and more attractive than the last for over 3/4 of a century in today's world of faster, cheaper is beautiful. His philosophy of contentment of doing the best whatever you're dealt(he was homeless at NINE YRS OLD, told by his mom after his dad abandoned the family that he "needed to find his own way in the world and to never return")makes this man amazing...
