to have a success after a couple of, if not failures then mediocre results in Sourdough Baking. Tried a variant of the Plain Flour Sourdough recipe replacing 1 cup of it with Spelt Flour. While there wasn't as great of a raise(as expected; Spelt has less Gluten) the loaf had a good crumb and color. And the TASTE! I think Adding Spelt to my Plain Flour recipes will be a regular occurrence from now on!
I think I'll order a couple bags of other Ancient Wheat Flours and see what the results will be...
