To add insult to injury this week, the Fermented Daikon pickles I was making had to be dumped today. When I do Veg Ferments I give them 2 weeks. Smelled right, bascially Sauerfraut-y. The taste initially was good but quickly had a strong petrol backtaste....really NASTY. I haven't had much luck this WInter with Veggie Ferments, probably due to our weather. I've decided to return to my standard Tsukemono processing of garden production.
