Feb. 8th, 2009 12:44 pmA number of folks over the yrs have asked for the recipe to a crockpot dish I've brought often to Blots and other pot-luck events and figured since a couple of folks at Chuck's work wanted a hardcopy, that I'd post this "Semi-Homemade" concoction her as well......
Eggplant 1-Pot
In a large Crockpot on low pour 1 bottle Ragu Mushroom Spaghetti sauce(this one makes the best taste, though others are good as well)and 1 can Rotel Tomato with Lime and Cilantro(no exchanges. ANything else makes an average product).
In a heavy pan add a couple Tablespoons Good Olive Oil and 1 coarsely chopped med or large Yellow Onion till Golden, then quickly toss with 2 clovesd minced Garlic. Add to the Crockpot.
Take 1 pound Hamburger and cook until all red is gone. Add 1 Tablespoon Paprika and 1 Tablespoon Chili Powder. Cook for a minute or two.Drain and add to Crockpot.
Now, you have a choice. Chop 1 large or two Med Eggplants into 2 inch squares. You can add them directly to the pot, increase Temp to High and cook for 2 hrs OR you can Steam them until Tender(they're also sweeter this way with the bitterness draining out)adding to the Low temp and cooking for 1 hr.
Serves 2 for 3 days;>....
