Adventures In Mechanical Baking;>
Sep. 30th, 2012 12:40 pmI admit that I'm a bit of a Luddite in the kitchen. I've never liked Pasta or Bread machines(though the latter is at least edible). I'd always made bread by hand but pretty much stopped yrs ago due to the pain the kneading would cause with my Neuropathy and Arthritis. Last week my folks gave me Mom's old commercial-grade Kitchenaid machine and this AM I decided to give it a try, using a simple Cuban Bread recipe. 2hrs later I had two hot delicious loaves and no need to dig into the Vicodin afterwards!
Crust was a bit tough but the recipe called for APflour and all I had on-hand was Bread. Other than that it was as good and as pretty as anything you'd see in at least a grocery store Bakery. This is one hand-me-down that's truly useful....
Cheers,
Pat
