After today I'm esp glad I used some of my COVID Cash to order some high end Japanese Rice. In the last yr I've learned a lot about a grain I've been eating all my life:
Washing makes a difference
Quality matters
Different cultivars ARE different
Just as a Red Delicious and a Granny Smith Apple taste markedly different so can Rice cultivars. I've been a fan of Koshihikari for yrs but with my CC I ordered a sample of a number of different cultivars. Tonight's is Yumeprika. Sweeter and more sticky than Koshihikari, I think it'll make esp good Riceballs because just plain it's delicious!

Makes sense, but fortunately for me I'm not a foodie and prefer to slop so much curry on my rice, it's primarily a structural medium '-) Seriously though, if gods forbid I have to go back to making my own dinners including risking COVID at the farmers' market, it would be rice or solid pasta most days; I can't understand why this vegan meal service the housemate generously pays for keeps giving me quinoa (the diced-up kind that sticks in my dental work and tastes like grit, not the football-shaped grains) and fake meat.
